Popayán is a very traditional and cultural city that has received two recognitions from UNESCO. The rich mix of African, Spanish and indigenous recipes passed down orally throughout the years awarded the city a gastronomical recognition in 2005. Therefore, trying the local cuisine is a must when visiting Popayán. The second was in 2009, when Popayán’s Holy Week processions were acknowledged by UNESCO for its almost half a millennium continuation of carefully kept tradition.
